Scampi po'boy
Method
1.
Cook Whitby Scampi according to instructions on the back of the pack.
2.
Whisk together 2 tablespoons of mayonnaise with 2 generous shakes of cajun spice.
3.
Slice baguette in half.
4.
Place vine tomatoes and lettuce in the base of the baguette.
5.
Place the scampi on top and generously drizzle with the mayonnaise.
6.
Close the baguette and serve.

Warming scampi with rainbow roasts

2 medium sized beetroot scrubbed

Butternut squash
-
2 large parsnips
-
Vegetable oil
-
Runny honey
-
Kale
-
Butter
Method
1.
Preheat oven to 180 degrees.
2.
Cut beetroot, squash and parsnips into roughly equal chunks.
3.
Drizzle with honey and oil and season to taste.
4.
Cook in preheated oven for 20 minutes.
5.
On a separate tray, place the frozen scampi and cook as per instructions for 18 mins.
6.
Serve with steamed kale and a dollop of butter.
